Marcia’s Spicy Thai Noodles

My friend Marcia passed away in June 2023. She is remembered for her constant smile, her love of whimsy, her kindness, and her contagious laugh. This is her famous pot luck dish, one we always looked forward to at every event.

Serves : 4 (if side dish, 2 if a meal)

Increase the basic recipe by 2, 3, or 4. Marcia would 4x the recipe for pot lucks.

Ingredients:

8 oz. spaghetti (break in half before cooking—easier to eat) (Can substitute any pasta)

1/4 cup canola oil

3 Tbsp. sesame oil

1 tsp. crushed red pepper flakes

1 tsp. salt

3 Tbsp. honey

2 Tbsp. soy sauce

1 bunch chopped green onions

1/2 cup chopped dry roasted peanuts

Toasted sesame seeds (optional)

Minced cilantro (optional)

Directions:

Cook pasta al dente. Drain and rinse with cold water. Drain well and dump in large bowl.

Heat canola oil, sesame oil, and red pepper flakes in small pan for about 3-4 minutes. You want the oil to just release the flavor of the pepper flakes.

Turn off heat. Add salt, honey, and soy sauce to the pan and stir.

Pour the warm sauce over the past and mix well. At this point, you can cover and refrigerate (can make a day ahead). This dish is also excellent warm.

Before serving, stir the noodles well to coat in sauce and add onions, peanuts, sesame seeds, and cilantro.
